Truffle Brownies

The Food Network had this contest, the first of many, to find the next Big Cooking Star, Steve & Dan were the Winners!  They won their own Cooking Show, for about five whole minutes.

For which I am grateful, because I was able to bag this great brownie recipe off of them.

So, to Steve & Dan, where ever you are cooking now, my imaginary chef’s hat is off to you:P

Truffle Brownies by Steve Mcdonagh & Dan Smith:

2 eggs

1/2 tsp salt

1 cup sugar

1 tbl vanilla

1 stick butter

3 oz unsweetened chocolate squares

1/2 cup flour

Oven set at 350 degrees, 9 inch pan greased. (They used a disposable aluminum, I use a silicon, the main idea being that the pan can be literally peeled away from the brownies, which are very fudge-like.)

With mixer, beat eggs until frothy.  Add sugar, beat until thick and creamy, about 2 minutes.  Mix in the vanilla.

In a microwave proof bowl ( I use my pyrex measuring cup) melt the butter and chocolate 20 seconds at a time, stirring in between, until they are melted together.

Pour melted chocolate-butter into batter and mix.  Add the flour and mix.

Pour into prepared pan and bake for 15 -20 minutes until barely set.

Remove pan from oven and cool.

Chocolate Ganache:

1/2 cup (4 oz chocolate chips)

1/4 cup heavy whipping cream

Micro 20 seconds at a time, stirring in between until well mixed.  Spread on brownies immediately.

Place pan in freezer for one hour.

Remove and slice immediately.  Enjoy:P
